Slow Cooker Beef Stew

Time: 6-10 hours

Makes 8-10 servings

Ingredients

2 lbs stew beef

1 Tbsp ghee or coconut oil

1 onion, diced

6 celery stalks, diced

8 carrots, sliced or diced

3 garlic cloves, minced

2 bay leaves

6-8 cups of beef bone broth (enough to cover the meat and vegetables in the slow cooker)

Sea salt to taste

Handful of chopped spinach for garnish

Kitchen Tools Needed

  • Slow cooker 

Instructions

Heat the ghee or coconut oil in a skillet and brown the meat.

Once the meat is browned, add it, plus all of the other ingredients except the spinach, to the slow cooker and cook on high for 5-6 hours, or low for about 10 hours.

Season with sea salt to taste (pepper is optional) and top with spinach when serving.
