Let’s Have Some Dark Chocolate!

In honor of Valentine’s Day, let’s talk CHOCOLATE!

Dark chocolate (70% cocoa or higher) is a healthy and nutrient-dense go-to when you are craving something a little sweet and decadent. That doesn’t mean you should eat a lot of chocolate, since it can be pretty calorie-dense, but enjoying it in moderation can have added health benefits! Dark chocolate is rich in magnesium, iron, manganese, and copper plus other trace minerals; it promotes blood flow which supports cognitive function; and it contains fiber, healthy fats, and a variety of powerful antioxidants.

For the best benefits, remember to choose dark chocolate with 70% cocoa (or cacao) or higher that is organic and ethically-sourced (labeled as “fair trade”), and consume it in moderation. One of my favorite brands is Theo: it is widely available, less expensive than many brands, and ethically sourced. 



Dark Chocolate Dipped Strawberries

Ingredients

¼ cup dark chocolate chunks or chips

1 Tbsp coconut oil

1 Tbsp honey 

8-12 strawberries, washed and dried (this recipe works well with banana slices too!)

A pinch of sea salt


Instructions

  1. Line a plate with wax paper or parchment paper. 

  2. Using a double boiler, melt the coconut oil, then add the honey, cocoa powder and sea salt. 

  3. Stir until fully combined and smooth. 

  4. Remove from heat and allow to cool for 2-3 minutes. 

  5. Dip each strawberry in the chocolate mixture and place onto the plate lined with wax paper. 

  6. Place in the refrigerator for about 20 minutes or until the chocolate has hardened. 

  7. Enjoy!
